Beef bones blanched and rinsed, onion and ginger charred over open flame, star anise and cassia toasted dry before they go in.
Mint, coriander, perilla and sawtooth washed and picked. Bean sprouts rinsed cold. Limes cut only as they are needed.
Green papaya and carrot into vinegar. Nước chấm tasted and adjusted — fish sauce, lime, sugar, chilli, garlic — until it is right for the day.
